Sweater Weather’s Best Friend: Theresa’s Lasagna Soup

SOUP SEASON: Part 6

Fall is sweeping across Wasilla — the mountains dusted with snow, the air crisp with woodsmoke, and sweaters are officially in rotation. Around here, that can only mean one thing: it’s soup season! And no one embraces it quite like Theresa, one of our incredible appliance experts on the Wasilla sales team. This week, Theresa created her famous Lasagna Soup, and let us tell you — it vanished faster than the first leaves of September. Imagine all the rich, hearty flavors of classic lasagna packed into a steaming bowl of comfort. Layers of Italian flavors - feels like a hug from the inside out.

Lasagna Soup Ingredients
1 medium yellow onion (small dice)
Minced garlic (As much as your heart desires)
1 lb Jimmy dean hot pork sausage 
1 28 oz can San Marzano diced tomatoes
1 16oz box San Marzano crushed tomatoes 
6 cups chicken broth
1/2 cup of heavy cream 
Italian seasoning, garlic salt, s&p to taste 
Lasagna noodles broken up (about a half a box)

Ricotta topping
Whole milk 15 oz tub ricotta 
1/4 cup of parmesan 
1/4 cup of mozzarella (Always welcome to add more)
Black pepper & Garlic Salt
( Trader joe’s grinder is what I use)
Parsley to top

Start off by getting your onion diced/ station ready, cans opened & ingredients measured out.

Mix together your ricotta mixture in a bowl & let it marinate in the fridge while you cook your soup.

Start your pot off on a low/ medium heat & add in caramelized garlic evoo then put in the onions, once start to sweat add in the sausage.

Once the sausage starts to brown add in your seasonings & then once cooked through add the diced & crushed tomatoes. Then add in the chicken broth. Let this come to a boil & let it all marry together/simmer for 15-20 minutes.

After the flavors marry together add the broken chunks of lasagna soup. At the end add in heavy cream for extra creaminess. This took about 8 minutes & i stirred twice in between to check done-ness.

Scoop on as much marinated ricotta mixture as you would like & enjoy. This recipe is perfect for a rainy day & is a perfect comfort meal. 

Side notes:
The canned tomatoes you add DO matter this tastes best with san marzano. Hot sausage is the kind to use with this kind of soup. I’ve used maple, italian, regular but the hot gives it a kick!
